The symphony of incredible aromas and flavours fill the air; the gastronomic options are ceaseless; and food fanatics rejoice in exquisite culinary delights of Kerala. The enticing cuisine of Kerala is influenced by the historical, cultural, religious, geological factors which set it apart from other regions of India and is one of crucial

Sadhya literally meaning the feast is an integral part of Kerala’s culinary arts and served specially during festivities and special occasions. This complete vegan feast is served on plantain leaf with boiled rice and more than 14 side-dishes, savouries, pickles. Three to four course of rice is served with each side dish at a time. The main course is complemented with the traditional dessert, Payasam.

While on culinary tour to Kerala, you can experience that Kerala cuisine inculcates the essence of foreign culinary culture combined with indigenous flavours which is the result of cultural influence of colonial rule of Greek, Portuguese, Arabs, Chinese and English during medieval period.

Kerala being the terrain of never-ending array of coconut palms utilizes coconut as the core ingredient to concoct delectable dishes that are sure to tantalize one’s taste buds. The lush fields of paddy cultivated in abundance at Kerala’s scenic countryside make rice the staple diet of Keralites. Considered to be the land of spices, there is liberal use of exotic spices in Kerala’s culinary preparations. A couple of herbs used in the cuisine are curry leaves, bay leaves, coriander leaves and mint. Alongwith rice, Tapioca forms the basic diet of Keralites and is exotically prepared with or without spices and herbs and accompanied by mouth watering fish curry.
