Another lesson that I took away from Jacques was when he answered a question about what it takes to be a great chef. He said (paraphrasing a little)...
First level is it takes hard work and consistency. Then the second level is learning your craft and that comes doing it over and over again until it's second nature.
There's a lot of truth to that with many professions.
